Molasses in the foodstuff industry
Molasses, also called liquid sugar, can be divided into two types. There is sugar beet molasses and sugarcane molasses. Molasses from sugar beet contains approximately 47 to 52 percent sugar, while molasses from sugarcane is 47 to 55 percent.
Molasses is frequently used in the fermentation industry. As the sticky substance is often the only supply of carbohydrates, it’s mostly used to allow yeast cultures and bacteria to grow. Baking yeast and brewer’s yeast is often produced with molasses. In Europe, 90% of sugar beet molasses is used.
In addition, this liquid sugar takes on the role of an aroma carrier or a natural colouring agent. Molasses is in fact also referred to as„black gold“ since its usage is supposed to have positive effects on human well-being.
Molasses in industry
Molasses is also used in industry as an environmentally friendly binding agent. It doesn’t give off any toxins even under high temperatures either. This is why it’s used in the production of car tyres and in the cement industry, for example.
